Our Cheeses —

 
 

We craft a selection of handmade cheeses using raw milk that are all are suitable for vegetarians. Flavours vary slightly across the seasons due to the changing diet of the animals. Cheeses made from spring and summer milk tend to be quite floral and grassy, while winter cheeses you’ll notice they’re more savoury. Each is unique, the joy of raw milk!

Burwash Rose —

Burwash Rose is a semi-soft cheese. Washed in English rose water, it’s creamy and sticky,  with wonderfully pungent aroma – the perfect balance of notes, a true melt in the mouth cheese.

Milk type: Raw cows milk from Kingcott Dairy

Maturation Period: 6-8 weeks Weight and shape: Cylindrical, 500g small - 1.5kg large

Cheese dimension: Small 5ins diameter - Large 9ins diameter

How to Enjoy: Chilli Jam, and toasted Sourdough. Delicious baked in the oven!

Goodweald Smoked —

Our Goodweald Smoked is a hard farmhouse cheese that has been naturally smoked over oak chippings by the award winning Weald smokery.  Creating a rich, full bodied and pleasant toasted aroma.

Milk type: Raw cows milk from Kingcott Dairy

Maturation Period: Four months

Weight and shape: Half Moon, 2kg to 2.4kg

Cheese dimension: Height 3.5ins Width 9.5ins, half moon

How to Enjoy: Delicious with raisin bread. Makes a superb smoky macaroni cheese, served with a watercress salad

Lord of the Hundreds —

Lords is a hard, naturally rinded, complex cheese, fabulously savoury, yet its flavour hints at caramelised hazelnuts, along with fresh grassy notes. 

Milk type: Raw ewes milk from Boydells Dairy

Maturation Period: Eight to ten months

Weight and shape: Square 4kgs

Cheese dimension: Height 4ins Width 7ins

How to Enjoy: Lovely with charcoal biscuits, quince jelly and pears too. Lords was featured in the ‘Rare Breeds Society’ cookbook and many chefs use it as an alternative to Parmesan.

Olde Sussex has an open and bouncy texture. This cheese is wonderfully deep, rich and creamy, with a superb tang.
