10 month matured, cows milk hard cheese. Burjack is our special, limited addition cheese made just for Christmas. It is a hard crumbly cheddar with a strong rich flavour, leaving a great tang. It has been wrapped in buttered muslin to enhance it’s creamy taste. Burjack is the herd name of the cows we have at Burnt House Farm and in honour of our Grandparents who started the farm in 1948, we have named the new cheese ‘Burjack Cheddar’
